What I Ate: September 15, 2010 (The Odd Duck Farm to Trailer)

Dinner: Went back to The Odd Duck Farm to Trailer (1219 S Lamar Blvd, Austin, TX‎ - (512) 695-6922‎), this time with Jeff Potter after he gave his Cooking for Geeks talk at Whole Foods Global Headquarters.

Then we decided to taste a doughnut from Gourdough's (1219 S Lamar Blvd, Austin, TX). Tina and I selected the Dirty Berry (Fudge Icing with Grilled Strawberries). It was delicious. I thought the crunchy exterior and chewy and fluffy interior of the doughnut was excellent and it worked really well with the melted chocolate chips and strawberries.

  • I'm glad! If you don't want to rig your own, you can get one from Auber Instruments for $140: Sous Vide Controller or this new one (that has audible alarms for if the temperature goes too high) for $180: Latest Sous Vide Controller.

    Another alternative if you can afford the higher cost is this immersion circulator from Williams-Sonoma. It's $800 (a couple hundred less than a digital immersion circulator that you can get normally) and WS is giving a 20-quart pot and polycarb water bath away with the unit. The circulator comes in a nice box (as opposed to circulators you buy from lab equipment retailers) with a book on sous vide supposedly written by Thomas Keller: PolyScience Immersion Circulator made for Williams-Sonoma

  • I think part of the appeal for my husband is figuring out how to make it from scratch. His current plans include an old hair straightener of mine and a fountain pump, but we'll see what he comes up with in the end. :)
