What I Ate: April 8, 2010 (Sous Vide Skirt Steak)

Lunch: We ate leftovers for lunch. I had chicken parmesan with grilled zucchini and a breadstick.

Dinner: I cooked sous vide skirt steak for 48 hours at 55°C (131°F) to convert all the collagen in this normally tough and chewy cut into gelatin. Before vacuum packing it, I seasoned with onion powder, cayenne pepper, ground black pepper, olive oil, and soy sauce. After removing it from the bag, I seared it to give it a flavorful crust. The end result was an incredibly tender piece of beef that tasted like it was a much more expensive cut (had the luxuriousness of rib meat). I served it with grilled asparagus and white rice.

  • 48 hours? Wow…so, do you now just keep it running and just always have something cooking in it? :-p
