What I Ate: January 27, 2010 (Mesquite Smoked Baby Back Ribs)

Lunch: Tina stir-fried some rice with the remaining pork belly and broccoli rabe and served it with a corn soup.

Dinner: I mesquite smoked a rack of baby back ribs (as well as a couple pounds of beef short ribs, but that's for a different meal) and ate it with broccoli and tater tots.

  • Looks pretty meaty. The pork spares here are really "spare" - hardly any meat on 'em.

    Did you throw mesquite smoke wood chunks on the charcoal, or just use lump mesquite charcoal?

  • I only had mesquite wood chips so I tried to make them last longer by making an aluminum tray for them to be held in so they would all burn up immediately on the charcoal. It didn't work that well - there was a little smokiness, but only some of the wood chips gave off smoke. I should have just put them on the coals and kept feeding it.
